Monterey

Scott and Liz were nice enough to let us tag along with them last weekend to Monterey. It was sooo nice to get away. I had the best time. We got there late Thursday night but first thing Friday morning Scott announced that we were going to First Awakenings and then hit the grocery store. I was confused because the name reminded me of a church but I am happy to report that it was a legit place to eat. Their pancakes are 18" round and amazing! I really want to go back next time we're in Monterey.
The house that we stayed in was about two blocks from the ocean so rain and all we decided to go for a walk. I love the ocean!
While we were there we got a chance to see Brian and Hilary Wiest (CHP man now but used to be in Roseville 9th ward with us) and have have "date night" with them. We went to dinner at a place called Hula's which had some tasty burgers and some unforgettable sweet potatoe fries. After dinner we played games and somehow got on the subject of flexibility so I did the splits and it must have been getting late because the girls started stretching...it felt like a slumber party in high school.
Hilary had gotten us free tickets to the Monterey Bay Aquarium so on Saturday we went to check out the animals and exhibits.
Carson loved his first trip to the aquarium. I think his favorite exhibit was the otters because while watching them swim and play he would laugh. Carson ditched his stroller and was very hands on. He wanted to be up close and personal, can you blame him?!
We were looking at the sharks when all of a sudden this ugly fish (pictured below) comes out of nowhere and everyone gasps. It was huge!
Scott and Liz thanks for inviting us, we had the greatest time. Hopefully we weren't too much too soon!

Tasty Tuesdays

Robin's Caramel Brownies

My "sister in-law" Robin made these scrumptious brownies a couple of weeks ago. They were pretty rich but are to die for. My mouth is watering just thinking about them.

14 oz. caramel
1/2 c. evaporated milk + 1/3 c. evaporated milk
1 (18.25oz) German chocolate cake mix
3/4 c. butter, melted
1/4 c. chopped pecans
2 c. milk choc. chips

1. Peel caramels (this takes forever) and place in microwave safe bowl. Stir in 1/2 c. evaporated milk. Heat and stir until caramels are melted.
2. Preheat oven to 350*. Grease 9x13 inch pan or 8x8 (deeper)
3. In large bowl, mix cake mix, 1/3 c. evaporated milk, melted butter and pecans. Place 1/2 of batter into prepared baking pan.
4. Bake for 8 min. Place remaining batter in fridge.
5. Remove form oven and sprinkle choc. chips on top. Drizzle caramel sauce over choc. chips. Remove remaining mix from fridge. Using tsp, make small balls with batter and smash flat. Very carefully place on top of caramel sauce until top is completely covered.
6. Bake for 20 min.
Served best the day after

8 months

Our little ham. All smiles, all the time. He is such a happy kid.


Last weekend Scott and Liz invited us to go to Monterey with them and we had so much fun! I'll do another post on the trip later. Anyways, while we were there we went to the Monterey Aquarium (thanks Hilary) and Carson loved looking at everything he saw, he was totally mesmerized. He only lasted in his stroller for a few minutes because he wanted to get a closer look at everything he saw. Other than that there is no big news to report this month with Carson. He is sleeping better at night, finally, which means he wants to eat more during the day which I am ok more than ok with. Anything for a good nights sleep. We are also working on crawling but he doesn't prefer his stomach. He gets frustrated and usually rolls over or just puts his head on his hands and cries-drama king. More of his personality emerges everyday and we are having so much fun getting to know our little man.
