Tasty Tuesdays


This recipe is from Bob Greene's Best Life Cook Book that was recently featured on Oprah. I tried it that same night and it was mouth watering. I will make it again for sure. Oh, I can't forget to mention that not only does this recipe taste yummy but it is good for you too!

I am forgetful so unfortunately I don't have a personal picture of this recipe but I like it when posts have a picture so this picture is an impostor that looks pretty close the the real deal.

Shrimp and Edamame Rotini

3 C. rotini
1 1/2 C. edamames, thawed
1T. Olive Oil
4 cloves of garlic, minced
1 lb. of shrimp
1 13oz can diced tomatoes
1/4 C. sauteed onions*
1 C. Parmesan cheese
3T. fresh parsley, chopped
1/4 C. capers*
salt ands pepper to taste

Cook Rotini. Add Edamame last 5 min.

Heat oil over medium heat. Add garlic until golden (30sec-1min). Add shrimp-cook 1 min. per side. Then add tomatoes and bring to boil. Lower heat and simmer for 2 min.

Combine all ingredients.

Serves 5 and has 486 calories per serving. * I added these to the recipe
