Tasty Tuesdays

Chocolate Chip-Pumpkin Bread...mmm
1/2 C. unsalted butter
1 1/4 C. sugar
3 Large eggs
1tsp vanilla extract
1 C. canned pumpkin (not pumpkin pie filling)
1 3/4 C. Flour
1tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp each: cinnamon, ground ginger, and ground nutmeg.
1/2 C milk
3/4 C chocolate chips/raisins-not my fav.
nuts are optional

1. Cream the butter gradually adding the sugar. Add in eggs one at a time. Add vanilla and pumpkin.
2. Sift flour, baking soda/powder, salt and spices
3. Blend 1/3 of the flour mixture into the butter mixture. Then add 1/2 of the milk. Alternate additions of remaining flour mixture and milk, blending well after each addition. Fold in chocolate chips
4. Scrape batter into prepared pan at 350 * for 50-60 minutes
5. Let cool for 15 minutes--Enjoy!!

Gift idea: this year for neighbors and the sister I visit teach, I am planning on making them a loaf wrapped in parchment paper with wrapping paper over it and tying it with a pretty ribbon to a inexpensive cutting board. Presentation is great, usable and edible too!
