Next Monday, the first day of second semester has come all too soon. To say that I have enjoyed my "break" would be an understatement. I have loved being able to relax and enjoy my family.
I have loved staying up late, watching Carson play with his new toys and watching him blow bubbles in the bath.
Even though we haven't done anything that exciting, I have loved spending time with Andrew
I have also enjoyed baking (although my thighs have not).
My favorite part of making cookies is watching Carson pick through the dough and cookies looking for the "good stuff" (chocolate chips).
Speaking of Carson, he recently had a Dr.'s appointment and he is officially a shrimp in the 6% percentile for his weight. The doctor said that we need to fatten him up by making drink milk only...which is hard when the first thing he says in the morning is juice.
Although, I had a ton of pre-reading (lame I know) that I am still working on, I am almost done getting our house in order. For those that know me well are probably wondering what order needs to be done. Well, my goal is a clean house, laundry free, pantry stocked and freezer full of treats so that WHEN we want something sweet to eat and I don't have time to make it it will be ready.
With that said, here is the recipe I use for the BEST chocolate chip cookies-ever!!
Cream smooth:
3 sticks of butter, 2 cups pf brown sugar and 1 large box of instant vanilla pudding.
Add in: 3 eggs
Add and mix well: 1 heaping tsp salt
2 tsp baking soda
2 tsp vailla
1 cup blended oatmeal
3 heaping cups of flour
2 heaping cups of chocolate chips
Bake at 385 for 8 minutes
my tip: after I am done I freeze most of them and let them thaw and they taste like they just came out of the oven!
With that said, I am going to enjoy the last week of freedom...except for pre-reading. Here are my books just for next semester and I am even missing one!
I will give updates (don't know when) throughout the semester. We are doing I.V. sticks next week and we have to do them on each other....I am scared to death because when I was having Carson it took the nurse over an hour to get one in me! So I'm sure I will have a good story soon.
Just so you don't think that I am ungrateful for my circumstances because I know that I tend to whine about school and being away from home, I know that I am lucky to be able to have this opportunity to get my degree. That's all for now.
